VITICULTURE

Organic cultivation.

Selective manual harvesting. Grapes are harvested in the same time, when the Riesling is slightly ahead ripening and the Chardonnay is fully ripen.


WINEMAKING

Ancestral wine vinification.

During the native fermentation, when the residual sugar is about 10 grams per liter, the must is bottled.

The fermentation continues and creates this natural sparkling wine characterized by the presence of sediments in the bottle.
