In the cozy atmosphere of our Enoteca, located within the medieval castle courtyard, you’ll enjoy a guided tasting dedicated exclusively to our exceptional Spumanti Ancestrali. Produced through an artisanal method rooted in tradition, these sparkling wines undergo spontaneous fermentations initiated by indigenous yeasts, without the addition of external sugars or components. Through careful manual disgorgement and lengthy bottle refinements, from 24 up to 100 months on native yeasts, our ancestral wines develop a naturally creamy perlage, distinctive freshness, delicate finesse, and rich aromatic complexity. Each sip authentically expresses our terroir, capturing the true essence and purity of our land.
