Organic cultivation.
The grapes of Chardonnay, Müller Thurgau and Riesling Renano are manually harvested at a precise level of ripening, when the balance between acids and sugars in berries is just right to enable the vinification with the ancestral method.
WINEMAKING
Ancestral wine vinification.
During the native fermentation, when the residual sugar is about 10 grams per liter, the must is bottled.
The fermentation continues and creates this natural sparkling wine characterized by the presence of sediments in the bottle.
